Scanpan Professional is made from a core of solid squeeze-cast aluminum, forged into shape with 200 tons of pressure. The optimum thickness of the pan base prevents warping and keeps the pan base perfectly flat, especially important when used with glass top or ceramic ranges. The patented nonstick surface is created by firing a ceramic-titanium particles into the pan and a specially formulated nonstick compound is embedded in the ceramic-titanium surface. Having tried Calphalon, Lodge cast iron and All-Clad pans, in addition to many lesser varieties, this is my favorite pan. Not too heavy, excellent heat distribution, comfortable handle, cleans incredibly easily, no seasoning requirement, looks great without the maintenance requirements of stainless steel, 500 degree heat tolerance, dishwasher safe, allows metal utensils--I could not ask for more, except perhaps less expense. Even though the others are great pans, they cannot compare to this one. I plan on getting more pieces.
